Brie Chicken Salad with Baguette Rounds

Ingredients

  • 1 tub (185 g) Président Spreadable Brie
  • 2 tbsp (30 mL) cider vinegar
  • 4 tsp (20 mL) grainy mustard
  • 1 tsp (5 mL) honey
  • 1/2 tsp (2 mL) each salt and pepper
  • 1 1/2 cups (375 mL) shredded cooked chicken
  • 1 cup (250 mL) Brussels sprouts, thinly sliced
  • 1 cup (250 mL) arugula
  • 1 apple, cored and thinly sliced
  • 1/2 cup (125 mL) halved grapes
  • 1/3 cup (75 mL) dried cranberries
  • 1/4 cup (60 mL) finely chopped toasted pecans
  • 1 baguette, cut into 24 rounds

Directions

1. In large bowl, stir together spreadable Brie, vinegar, mustard, honey, salt and pepper; add chicken, tossing to coat well.

2. Stir in Brussels sprouts, arugula, apple, grapes, cranberries and pecans. Serve with baguette rounds.

Tip: If desired, toast baguette rounds under broiler until golden brown on both sides.
