Cooked and pressed cheese made from raw milk. It is aged in maturing cellars for at least six months. Comté is the #1 PDO consumed in france.
Flavour: nutty flavour with a hint of hazelnut
Because of its ability to melt, it can go to cheese fondu up to a croquemonsieur. Comté is great for cooking, try it in a mac n’ cheese. It is a fairly firm cheese so it can be shredded, sliced or cubed.
Reds from côtes-du-rônes, a palo cortado or off-dry amontillado sherry from spain. White wines with aromas of dried fruits and spices. Comté will go well with young red wines and champagne as well.
